BBQ Time!

So, the time has come my friends to talk of many things! Of ships, ceiling wax, and cabbages and kings…wait I mean BBQ! Yeah BBQ! (BONUS POINTS if you can name the movie that misquote is from!) Summer is here full force and its perfect time to fire up that grill and get to grilling! Did you expect a recipe? Ok, you know me so well! (yay you!) So here you go my lovely readers written in the Food Express here in Nebraska.

Memphis Style Back Ribs

Makes 6 servins

3 Cups barbecue woodchips in water for an hour

2 lemons halved

1/4  cup BBQ rub (recipe to follow)

Prepare the grill for 325 which is medium low and indirect cooking, if you are a stickler and prefer charcoal, then heat the coals on one side then cook ribs on the cooler side.

Squeeze the lemons on to the ribs after removing that sick silver lining. Set aside for five mkinues and rub liberally with the BBQ rub. Do not open the grill cover for at least the first thirty minutes. Place the ribs bone side down, over the cooler side of the grill and cook for 1 and a half hours.

After cooking then you can add bbq sauce if you want

Classic Rub

3 tbs granulated sugar

2 tbs smoked paprika

2tbs kosher salt

2 tbs packed dark brown sugar

1 tbs ground cumin

1 tbs ground black pepper

1 tbs onion powder

1 tbs garlic powder

2 tsp chili powder

1/2 tsp cayenne powder

Combine all ingredients. For a smoother rub place in spice grinder. This rub can be stored in an airtight container for up to SIX months!

1/2 cup almond flour

1 egg

1tbs Dijon mustard

1 tbs water

1/2 tbs lemon juice

1 tsp kosher salt 1 tsp smoked paprika

1/4 tsp ground black pepper
